Bang Bang Shrimp Taquitos Recipe

Spicy, Saucy Bang Bang Shrimp All Wrapped Up in Corn Tortillas
These baked Taquitos are a healthier option than frying—plus, they come out crisp and tasty.

Ingredients

  • 1/2 onion, finely chopped
  • 3+ cloves garlic, minced
  • 1 jalapeño, minced
  • 2 teaspoon olive oil
  • 1 vine tomato, diced
  • 1 pound medium raw shrimp (available from Fisherman's Market), peeled and deveined; cut into large, equal sized pieces
  • kosher salt
  • 2 tablespoons cilantro, finely chopped
  • 12 (6-inch) corn tortillas
  • olive oil spray
  • 1/2 cup Fisherman's Kitchen Bang Bang Sauce 
  • Optional garnishes: Fisherman's Kitchen Bang Bang sauce; green onion, chopped; avocado, thinly sliced; red onion, thinly sliced; lime wedges

    Let's Make It!

    Step 1
    Heat large skillet over medium heat; sauté the onion, garlic and jalapeño in 1 teaspoon oil until mixture is soft; add the tomatoes and cook until mixture is thickened, about 3-4 minutes; add 1/4 teaspoon salt and cilantro and cook 1 minute; remove the mix and place in large bowl

    Step 2
    Heat 1 teaspoon oil in medium-high skillet; tilt the pan as the oil warms, to coat the bottom of the pan; add the shrimp (make sure they are on a single layer, all touching the skillet) and cook until they are lightly browned on the outside and the meat is no longer transparent in the center; depending on the size of the shrimp and how many you have in the pan, this will usually take 3 to 5 minutes

    Step 3
    Transfer shrimp to paper towels to remove excess moisture; add cooked shrimp to mixture from Step 1 and gently mix; pour Bang Bang sauce over the shrimp filling; toss gently to coat

    Step 4
    Preheat the oven to 400F; line large nonstick baking sheets with foil; spray foil with olive oil spray

    Step 5
    Place 3 to 4 tortillas at a time between paper towels and microwave until warm (about 30 seconds); spread 3 tablespoons of shrimp filling onto the bottom third of each tortilla; roll tortilla up from the bottom to surround the filling; once rolled put tortilla on the baking sheet—seam side down; repeat with the remaining tortillas and shrimp filling; spray the tortillas with olive oil; bake until tortillas start to get golden and crispy, about 15 minutes

    Step 6
    Remove from oven; plate Taquitos, drizzle with Bang Bang Sauce and top with garnish of your choice
